Congratulations, Larry, on the new bike!   I echo Mike’s comments about getting some training before you attempt to take that big pig offroad.   I did the RawHyde “Intro to Adventure” and “Base Camp Alpha” trips shortly after getting my GS and restarting riding after a ~30-year hiatus.  It was money well spent as they are geared up to train exactly this situation: relatively new riders with big bikes.  You won’t be alone.  I burned a few frequent flyer miles and headed out to LA.  RawHyde is about 1 hour north in Castaic, CA.    There are certainly alternatives – but RawHyde is top-notch and will take great care of you.
